Chocolate Brownie

Writing this post from Ammu's (sis n law) place @ San Antonio. I made these brownies for her. :)

Ammu is an awesome cook and has a lot of specialty dishes on her plate. My personal favorite is "Mambazha Kootan" or "Ripe Mango Curry". Every time she prepares "Mambazha Kootan", I make sure that nothing is left out! :D

This time I wanted to make a sweet dish. And decided on brownies. As I was hopping from one blog to another, I came across Deb's Smitten Kitchen. Deb has an awesome collection of brownies, cakes and lot more. I wanted a simple brownie and  hence made a few changes to the ingredient list. Moreover, I had to make this quick. That means less time to play around with new techniques! :(  Next time. :)

Ingredients
  • All purpose flour - 1 1/4 C
  • Baking Powder - 3/4 t
  • Cocoa Powder - 1 C
  • Vanilla Extract - 1 T
  • Butter, room temp - 1.5 sticks
  • Sugar - 2 1/4 C
  • Eggs - 4






Method
  • Start off by heating the oven to 325°F.
  • Set the baking dish. For this: fit a foil, the size of the baking dish, into it.
  • Cut off excess foil from the dish.
  • Smear the foil with butter or shortening or spray like Deb used.
  • Mix all purpose flour and baking powder. Whisk well and keep aside.
  • Mix cocoa powder and butter in a bowl till it turns into a smooth paste.
  • Add sugar gradually and whisk well.
  • One by one, add eggs and continue mixing.
  • Now add vanilla extract and mix.
  • Add flour mix little by little and keep mixing.
  • Keep mixing until the mix turns into a smooth paste-like consistency.
  • Pour this mix into the baking dish and keep it in the oven.
  • Bake for 35-40 mins.
  • After the set time, take the dish out of the oven and allow it to cool.
  • Simple and tasty brownies ready!!!!

Hummus

How can I even dream of having a Pita bread without this yummy creamy dip --> Hummus of course. :) Like many other cuisines, Mediterranean was also introduced to me by my hubby dear. He loves Hummus and now, me too :D And thats how I ended trying to make it at home. Ingredients Yogurt - 1/4 C Garbanzo Beans / Chick Peas - 2 C Tahini (Sesame Seed Paste) - 1/2 C Lemon Juice - 1/2 C Garlic cloves - 3 Salt - 1/2 t Citric acid - 1/4 t Water - 2 T Mint Leaves - a few For garnishing Parsley - 2 T Cayenne Pepper or Paprika - 1 t Olive Oil - 1/4 C Method   In a food processor, add the garbonzo beans, garlic, lemon juice and salt, blend until smooth.  Next add yogurt, tahini, water, citric acid and mint leaves. Spread the hummus in a plate and garnish with parsley, cayenne pepper and olive oil. Serve with pita bread.

Shahi Paneer / Indian Cottage Cheese In Creamy Gravy

Shahi Paneer is a very popular dish in India. Shahi means "Royal". Shahi Paneer is a part of the " Mughlai " cuisine. "Mughlai" cuisine was developed in the kitchens of the Mughal Empire . This cuisine is always famous for its distinct aroma consisting of whole spices. Gosh, I am feeling hungry! :D Paneer is one of my all-time favorites. :) I just love Paneer. :D And so I am always in search of new paneer recipes.
