Samosa!!! Ahaaa.. One of our favorites for sure! :)
Samosa is a very popular South Asian snack. Its a type of stuffed pastry. Samosas' are mostly triangular in shape. They go well with Tamarind or Cilantro chutney, even Tomato Ketchup too.
I have made Samosa's before too. But none of them looked or tasted like the Samosa I had had long time back. When I saw the awesome pictures of Samosas' in Prerna's blog ( Indian Simmer ), I knew it was Jackpot!! And Voila! It was true, the recipe was perfect.

Secret of the triangular shape

Ingredients
For the Pastry
- All purpose flour/Maida - 1.5 C
- Semolina - 2 T
- Oil - 2 T
- Salt - to taste
- Ajwain Seeds - 1/2 t
- Water - 2/3 C
For the Filling
- Potato, mashed - 2
- Sweet green peas - 1/2 C
- Onions, sliced - 1 C
- Cumin Seeds - 1 t
- Green chilli, minced - 2
- Coriander Powder - 1.5 t
Method
For the Pastry
- Add all the ingredients (For the Pastry) into a bowl.
- To this, add oil and mix it well.
- Do make sure that the oil is mixed well with rest of the ingredients.
- Next, add water into the mix (in small portions) and knead it well to make a dough.
- You can show all your boxing techniques to the dough and play around for a while. ;)
- Once done, wrap the dough with a cloth or a plastic wrap and keep aside for 30 mins.
For the Filling
- Heat oil in a pan and then add cumin seeds to it.
- Once they splutter, add the minced chilli and sliced onion.
- Stir the mixture until the onion is soft and translucent.
- Next, add the sweet green peas and sprinkle turmeric over it.
- Allow it to cook for 2 mins.
- Once the green peas is ready, add coriander powder and mashed potatoes to it.
- Sprinkle salt, as required.
- Saute' the mixture so that all masalas' combine.
- Remove from stove and set aside to cool.
- Your filling is ready!! :)
Secret of the triangular shape
- Making the triangular shape of the Samosa is no longer a secret! :) Its easy and can be made by anyone.
- For this:
- Roll out lemon size balls of the dough.
- Take one portion and roll it into a circle using a rolling pin.
- Make sure that the circle fits the circumference of your palm!
- Cut the circle into half (semicircle).
- Take a small amount of the filling and roll it into a ball.
- Place the filling (ball shape) in the center of the semicircle.
- Wet your fingers in water and pat the straight end of the semicircle.
- The edges become wet and sticky (thats right!).
- Move one end of the straight edge over to center of the filling.
- Similarly, bring the other end of the semicircle to the center and stick it to the other.
- You have the triangular shape now! Don't ya?
- Wet your fingers again and stick the open end. You can use a fork to imprint the design as you stick, instead of your fingers.
Secret of the crunchiness
- Heat a deep fryer.
- Make sure that the stove is kept at Sim. This will help the Samosa to be cooked slowly (inside out) and form the crunchy cover.
- Also make sure that the Samosas are not fried for more than 4-5 mins.
- Ahaa.. Get ready to lick your fingers. Hot hot samosas are ready to be served.
OH my gosh, if only I had seen this post a few days ago, I probably would have made this with my mystery ingredient for Maitri (Ajwain)...it is still on my list of things I want to make soon. They look delicious!
