Palak Chappathi/ Spinach Flat Bread & an event

When I came across Vardhini's Dish it Out event, I knew I was going to participate :D Dunno if my blog is old enough to host an event!! So why not have fun participating??

Dish it Out

Three cheers to Vardhini for hosting this cool event and giving us amateurs a chance to experiment something new  :)

Popeye

Mr. A is not a huge fan of spinach though I try to include it into our diet in one form or another. Spinach reminds me of one person -- > Popeye the sailor man! I loved his show soo much, I still do ;)

Spinach is a rich source of vitamin A, vitamin C,vitamin E, vitamin K, magnesium, manganese, folate, betaine, iron, vitamin B2,calcium,potassium, vitamin B6, folic acid, copper, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids. (Wiki)

Palak Roti / Spinach Flat Bread

The best part of spinach chappathi (flat bread) is that it does not taste any different from the plain chappathi . To make the chappathis healthier, I add crushed garlic (Garlic helps in digestion). :)

Ingredients

  • Wheat Flour - 2 C
  • Salt - to taste
  • Water - 1/2 C (Using yogurt or milk will give you softer chappathis)

For the paste

  • Spinach / Palak - a bunch
  • Garlic cloves - 2
  • Water, to boil - 1.5 C

Palak Roti / Spinach Flat Bread

Method
  • Boil a pan of water.
  • Meanwhile, wash spinach very well with water.
  • Cut spinach to smaller portions and add it to the boiling water.
  • When the leaves wilt, remove the pan from fire.
  • Keep it aside to cool.
  • Blend/Grind the boiled spinach along with the water & garlic and keep aside.
  • Next, add salt to wheat.
  • Pour the ground mixture little by little into the mix.
  • Use mixture only as needed (Do not let the dough become watery)
  • Knead till it turns into a soft dough.
  • Divide the dough into lemon sized balls.
  • Roll the dough ball between your palms till they are smooth and without cracks.
  • Powder the ball with little wheat.
  • Roll the chappathi/bread till it is very thin.
  • Heat a pan on a medium flame and put the chappathi/bread  on the pan.
  • Once you start seeing bumps raised on the chappathi/bread turn it using a spatula.
  • Continue the same process on the other side too.
  • The chappathi is ready once you see light brown bumps on its surface.
  • Palak chappathi is all set to be served :D

Shahi Paneer / Indian Cottage Cheese In Creamy Gravy

Shahi Paneer is a very popular dish in India. Shahi means "Royal". Shahi Paneer is a part of the " Mughlai " cuisine. "Mughlai" cuisine was developed in the kitchens of the Mughal Empire . This cuisine is always famous for its distinct aroma consisting of whole spices. How can I even dream of having a Pita bread without this yummy creamy dip --> Hummus of course. :) Like many other cuisines, Mediterranean was also introduced to me by my hubby dear. The Kitchen Affaire turns One :)

The afternoon breeze and the sound of rustling leaves is so soothing. So here I sit, enjoying this change of weather, to pen memories of last year. Gosh!! I cant believe that - The Kitchen Affaire; is turning "One". :) Time does fly. Last year has been very eventful. An year that changed my title from: a carefree mommy's gal to an "adorable" ("A" would not agree with this!! hi hi) wife; an IT engineer to a house-wife;  and a huge move from my home in Kerala (India) to a new home in Houston (U.S.A). It feels like all of this happened in a blink of an eye. All this change wouldn't have sunk in so easily if not for my hubby dear. :)   Starting this blog was not impromptu. I used to blog during my college days. But this time I wanted a blog meant only for my cooking experiments or challenges. After settling down in our lovely apartment, I slowly started my cooking experiments. Initially I would jot all of it in a notebook. Then I decided not to a
