Last day, as usual, I was hoping to cook something new. And thanks to the huge blogosphere, I was sure I would find something new. But the problem was, I did not know what to search! :D
Finally, I hopped onto Aipi’s (US Masala) blog. Not only is Aipi a great cook, but she is also an awesome photographer. And that’s how I fell for her “Vegetable Manchurian”. Thank you gal! :D
I could not follow her recipe ditto as I was out of a few ingredients. Still, it came out awesome. A liked it so much that he ate a lott. Well, it got over the same day :D What more can I ask for. :)
Ingredients
For the Manchurian balls
- Cabbage, grated – 1 C
- Carrot, grated – 1 C
- Green beans, chopped – 5
- Onion, sliced – ¾ C
- Garlic, chopped – 3
- Green chilli, chopped – 1
- Soy sauce – 2 t
- All purpose flour – 6 T or as required
- Corn starch – 1 ½ T
- Rice Flour – 1 T
- Salt – to taste
- Black Pepper – to taste
- Oil – to fry
For the sauce
- Oil – 2 t
- Ginger, chopped – 1” pc
- Garlic, chopped – 5
- Black pepper powder – a pinch or to taste
- Soy sauce – 2 T
- Tomato Ketchup - 1T
- Sugar – ¾ t
- Corn Starch – 1 T
- Vegetable Broth– 1 ½ C
- Spring Onion, chopped - 2
- Water – if required
- Salt – as required
Method
For the Manchurian balls
- For frying, heat oil in a deep pan on medium heat.
- Take a large bowl and add cabbage, carrot, onion, beans and garlic to it.
- Mix this mixture well and be careful not to make it mushy.
- To this mixture, add salt, black pepper, soy sauce and continue mixing.
- Add all the flours and mix gently.
- Continue mixing till you can make balls out of this mixture (try to make them immediately as they tend to get soggy if kept for long).
- Make 1 inch sized balls of the mixture.
- Fry these balls in hot oil till they turn a golden brown color on all sides.
- Once done, remove from oil and keep aside.
For the sauce
- On medium high, heat oil in a pan.
- Once hot, add ginger, garlic and green chillies.
- Stir well for over a minute.
- Now add the green onions and continue stirring for a minute.
- Meanwhile, in another bowl, mix corn starch/flour with ¼ C of water.
- Make sure that no lumps are formed.
- To this, add soy sauce, chilli sauce (I did not have any), ketchup and mix well.
- Pour this mixture into the pan.
- Now add black pepper, sugar and vegetable broth (I dint have any of this either, so I made it at home).
- Adjust salt, to your taste.
- Allow the mix to boil and thicken to the required consistency.
- Once done, remove from fire.
For serving
- Arrange the Manchurian balls on a plate and pour the sauce over it.
- Garnish with the green onions (I had used a little extra :D).
Wohoooo.. Vegetable Manchurian is ready to be served. :D
