Took Patata (Double Fried Potato)

Every evening I sit & wonder, "what do I make today?". Soon, I reach for the laptop and start browsing for something "new"! :) Thats how I got this yummy & easy Sindhi snack from Alka's Sindhi Rasoi. Thank you Alka. :)

I learnt that Took Patata (Double fried potato) is generally served with Kadhi Chawal but is also enjoyed as an evening snack. So, here I am starting off with the recipe. :)

Ingredients
  • Potatoes: 3
  • Salt
  • Turmeric powder: 1/4 t
  • Coriander powder: 1/2 t
  • Red chilly powder: 1/4 t
  • Amchoor powder(Dry mango powder): 1/4 t
  • Oil for frying

Method
  • Peel the potatoes and slice them into four.
  • Slit them(not too deep) in criss- cross pattern.
  • Sprinkle salt over the slit potatoes and keep aside for 2 mins.
  • Wash them with some water and pat dry.
  • Heat oil  in a pan and gently slide the potatoes into the oil.
  • Fry on high flame for a min.
  • Lower heat, cover the pan with a lid and continue cooking the potatoes till well cooked.
  • Remove from fry.
  • Flatten the slices very softly.
  • You can do this by pressing the slices (which has been placed on a cutting board/plate) with a plate or with the palm of your hands (Optional).
  • Be sure not to crush the potatoes.
  • Slide the slices again into the hot oil and fry on high heat until they turn a golden brown.
  • Remove oil from pan (leave the potatoes in the pan).
  • Sprinkle little salt (as needed) and rest of the masalas and mix well.
  • Serve hot and crispy.

The Kitchen Affaire turns One :)

The afternoon breeze and the sound of rustling leaves is so soothing. So here I sit, enjoying this change of weather, to pen memories of last year. Gosh!! I cant believe that - The Kitchen Affaire; is turning "One". :) Time does fly. Last year has been very eventful. An year that changed my title from: a carefree mommy's gal to an "adorable" ("A" would not agree with this!! hi hi) wife; an IT engineer to a house-wife;  and a huge move from my home in Kerala (India) to a new home in Houston (U.S.A). It feels like all of this happened in a blink of an eye. All this change wouldn't have sunk in so easily if not for my hubby dear. :)   Starting this blog was not impromptu. I used to blog during my college days. But this time I wanted a blog meant only for my cooking experiments or challenges. After settling down in our lovely apartment, I slowly started my cooking experiments. Initially I would jot all of it in a notebook. Then I decided not to a...

Days fly by so fast!! Really!! It feels just like yesterday that I hooked up for this wonderful event (Veggie/Fruit  A Month ) chartered by our dearest Priya of Mharo Rajasthan's Recipe . A huge thank you to you Priya for including me. :) Lemon is the star of the month.   Lemon   refers to both an evergreen tree and its yellow fruit. Lemon has n number of uses from the simple everyday lemon   juice (lemonade) to a lemon marmalade. Prepare a vegetarian recipe (eggs are allowed) It has to be a brand new recipe folks, No archives please (breakfast, lunch, dinner, dessert - the word is anything :)).  Use of the logo is mandatory to help spread the word about the event.
